This recipe for blackberry turnovers is a great dessert or breakfast treat that you can make in advance. The tart blackberry jam filling and sweet, soft cookie-like turnover is a delicious combination.
Ingredients:
2 ½ cups
flour
1
tspn baking powder
½
tspn kosher salt
½ tspn vanilla extract
3/8 cup milk
5 tbsp unsalted butter, softened
4 tbsp vegetable shortening
¾ cup granulated sugar
1 egg
2 ½ cups blackberry jam
confectioners’
sugar
Preparation:
- In a large mixing bowl, combine the flour, baking powder, and salt. Set aside.
- In a separate bowl, mix together the milk and vanilla extract. Set aside.
- In a mixing bowl, cream 4 tbsp of the butter, the vegetable shortening, and the granulated sugar. Then beat in the egg.
- Mix in a 1/3 of the flour mixture followed by a 1/3 of the milk mixture. Repeat until you have used all of the flour and milk mixtures.
- Form the dough into 12 equal sized ball. Place these on a baking sheet and cover with plastic wrap or foil and refrigerate for 1 hour.
- Preheat the oven to 375 degrees Fahrenheit.
- Using the remaining tbsp of butter grease a baking sheet.
- Lightly heat the blackberry jam. Run it through a strainer to remove the seeds and let it cool.
- On a lightly floured surface, roll each ball into a circle about 7 to 8 inches in diameter. Spoon about 2 tbsp of blackberry jam into the middle of the circle leaving ½ inch of dough exposed around the perimeter.
- Moisten the exposed dough with your finger dipped in water. Fold the circle into a half moon shape. With the tines of a fork, crimp the curved edges of the dough together.
- Place the turnovers on a baking sheet and bake on the middle shelf of the over for 20 minutes. Cool on a cooling rack. Dust with confectioners’ sugar and serve.
