Stuffed Date Salad Recipe

This recipe for stuffed date salad is a great, light dessert salad that features simple ingredients and only takes minutes to prepare. The dates, pistachios, citrus fruit, and creme provide a myriad of textures and flavors which are a pleasant surprise from such a simple dish. It can serve as a great finish to a wide range of international meals!

Ingredients:

16 dates, stones removes

pistachios, shelled and chopped

mixed greens

orange slices

8 oz. package of cream cheese, room temperature

2 cups whipped cream

Preparation:

  1. Rinse dates in water.
  2. Remove stones from dates by slicing the side of the date.
  3. Chop pistachios. Put about a teaspoon of the pistachios inside of each date and set aside.
  4. In a small mixing bowl, mix together the cream cheese and whipped cream
  5. Cover the bottom of each salad bowl with mixed greens.
  6. Place a large spoonful of the cream cheese and whipped cream mixture on top of the mixed greens.
  7. Place 4 dates on top of the cream cheese and whipped cream mixture.
  8. Place slices of oranges around the perimeter of the salad.
