Roasted Cauliflower Steak Recipe
This recipe for roasted cauliflower is a rustic Italian favorite. It’s only takes a few minutes of preparation time and is ready within an hour. It’s a simple dish with just a few ingredients and is a great side dish or main course.
Equipment:
Dutch oven
Ingredients:
7 tbsp extra virgin olive oil
1 medium sized head of cauliflower
3 garlic cloves, finely chopped
4 anchovy fillets
1 tspn rosemary, finely chopped
1 14oz. can diced tomatoes
4 tbsp dry white wine
1 tspn chili flakes
1 tspn kosher salt
Preparation:
- Preheat oven to 450 degrees
- Add the olive oil to the Dutch oven. Heat the Dutch oven on the stovetop over medium high heat. Using tongs, place the cauliflower in the Dutch oven. Turn it every minute or two so that you get all sides to be a light golden brown. This should take about 7 to 8 minutes. Then remove the cauliflower.
- Add the garlic, rosemary, and anchovies to the dutch oven and cook for about a minute. Add the cauliflower back to the Dutch oven along with the can of tomatoes, the wine, chili flakes, and salt. Stir and spoon some of the mixture on top of the cauliflower.
- Place the lid on the Dutch oven and put it on the middle rack of the oven. Cook for 50 minutes.
- Remove the Dutch oven from the oven. Slice the cauliflower into 1 inch thick slices. Serve slices with the sauce.
