Creamy Spinach Salad Recipe

This is a quick and easy spinach salad recipe. It is garnished with spicy chili roasted pistachios that are perfectly balanced by the cool, creamy dressing.

Ingredients:
1 16oz. package of baby spinach

2 hard boiled eggs

½ white onion, chopped

½ cup mayonnaise

¼ tspn kosher salt

¼ tspn ground black pepper

2 tbsp white wine vinegar

2 tbsp sugar

1 tbsp heavy cream

1 tbsp vegetable oil

dried cranberries

chili roasted pistachios


Preparation:

  1. Place clean spinach leaves in a large bowl.
  2. Place the eggs, onion, mayonnaise, salt, pepper, vinegar, sugar, cream and oil in a food processor. Pulse until all of the ingredients are just combined retaining a course consistency. Refrigerate until ready to serve.
  3. When ready to serve, pour the mixture from step #2 over spinach and gently toss the salad to cover spinach leaves with the dressing.
  4. Garnish salad with the cranberries and pistachios and serve.
