Chicken Caesar Salad Recipe
The Chicken Caesar Salad is a classic, easy and quick recipe that compliments most meals. Although many believe that this salad originated in Europe, It was actually invented in Mexico in 1924. Restaurant owner Caesar Cardini served it for the first time at his restaurant, Caesar’s, in Tijuana. The salad quickly grew in popularity and today it can be found on menus throughout the World!
Ingredients:
dressing:
2 tbsp lemon juice
2 hard boiled eggs
2 tbsp balsamic vinegar
2 anchovy fillets
1 tbsp Dijon mustard
2 garlic cloves, peeled and chopped
1 tspn Worcestershire sauce
1 tspn black pepper
¼ tspn kosher salt
½ cup extra virgin olive oil
salad:
2 bunches of romaine lettuce, chopped
1 cup shredded Parmesan cheese
1 to 2 cups of croutons
2 cups of shredded meet from a roasted chicken
Preparation:
- Remove the egg yolks from the hard boiled eggs and put them into a food processor with the 2 anchovy fillets. Grind these two ingredients until well combined.
- Add the remaining ingredients for the salad dressing to the food processor. Mix until well combined. Refrigerate the dressing until ready to use.
- In a large salad bowl, add the romaine lettuce, croutons, chicken, and shredded Parmesan cheese. Mix together all of these ingredients and them with the salad dressing. Serve immediately.
